I do know that honey wine known as mead is used in some Celtic Pagan ceremonies. I am sure honey has been used in spellwork. Most spellwork is metaphor for your intentions anyway so if you want to use honey in a spell, go for it, you decide what it symbolizes for you, be creative and harm none,.
